Grilled Lobster with Fresh Herbs Recipe


Ingredients: 

  • 4 live lobsters
  • 1/3 cup olive oil
  • 2 tbsp. fresh basil, minced
  • 2 tbsp. fresh chives, minced
  • 1 tbsp. fresh fennel leaves, minced
  • 1 clove garlic, minced
  • Lemon wedges, quartered
  • Sea salt and freshly ground black pepper
  • Ingredients for the fresh herb butter
  • 1/4 cup melted butter or ghee
  • 2 tbsp. fresh chives, minced
  • 1 tbsp. fennel leaves, minced
  • 2 garlic cloves, minced

Method:

  1. Preheat your grill to a medium heat.
  2. For each lobster, place the tip of a knife on the cross at the base of the head and cut the lobster in half. (If you’re using live lobsters, this will kill them)
  3. Discard the sand sac near the head. Using the tip of the knife, carefully remove the gray intestinal vein. With a small spoon, scoop out the liver and any coral or eggs.
  4. In a small bowl, combine all the remaining ingredients for the lobster, and season to taste.
  5. Baste each lobster with the fresh herb oil.
  6. Place the lobsters on the grill, cut side up.
  7. Cover and cook for about 10 minutes.
  8. In a bowl, combine all the ingredients for the herb butter.
  9. Serve the lobster with the butter and fresh lemon wedges.
